Late Summer Foil Packets
I attended a family barbecue this weekend and, of course, corn on the cob was a staple. After bringing home six ears, I wanted to devise a recipe that would be excellent for left-overs and using up an excess of vegetables from the garden.
Late August is when corn as well as summer squash and zucchini are growing like crazy! Although Shelby and I are still in our apartment (one month and counting left!), these foil packets can be either grilled or baked in the oven.
The recipe is rather simple, so if you don't like zuchinni or would like to add potatoes, have at it!
Late Summer Foil Packets
Serves 4
Ingredients
3-4 Corn cobs, cut in thirds
1 c. Zucchini, cubed
1 c. Summer Squash, cubed
1 c. Onion, cubed
1/2 c. Scallions, optional
1/2 lb Sausage (I used Applegate hot dogs)
1/2 Packet of taco/cajun seasoning (Trader Joe's Taco Mix is my favorite)
Splash of beef broth
Directions
Add vegetables and sausage to a bowl and mix. Pour splash of beef broth and 1/2 packet of seasoning and mix. I found the best method for this is holding the bowl (tightly!) and tossing.
Scoop onto 4 separate sheets of aluminum foil, then seal tightly. Grill or bake at 400-degrees for 20-30 minutes, flipping foil packets over halfway through. Yum, yum!
